B.A. IN HOTEL & CATERING MANAGEMENT

GAO19 HOTEL

Aims
To offer a comprehensive course of studies to those who desire to emphasise the broader aspects of hospitality management within larger hotel, catering and allied operations in a national or international context.

Entry Requirements
MINIMUM entry requirement is: Pass (Grade D3 or better) in SIX Leaving Certificate subjects including Mathematics and English or Irish; two of these subjects must have been passed on Higher Level papers at Grade C3 or higher. In practice, entry levels are significantly above the minimum and points are calculated from the SIX best subjects.

Course Duration
Four years full-time.

Career Outlets
This course prepares graduates for progression to general management in medium-size to large establishments in the hotel, catering and tourism industries at home and abroad. Alternatively, graduates may decide to specialise in a specific area, such as marketing or finance in a large establishment or group, or proceed to further study.

Course Content

Year 1
Food Studies 1(Theoretical and Practical), Catering Studies 1, Accommodation Studies, Management Studies 1, Accountancy, Social Studies, French, German or Spanish.

After the first year examinations, students are placed by the College in an hotel and catering establishment in Ireland for a period of 16 weeks.

Year 2
Food Studies 2 (Theoretical and Practical), Catering Studies 2, Management Studies 2, Finance & Control, Management Science, Legal Studies, French, German or Spanish.

Year 3
After the second year examinations, students are placed by the College in hotel and catering establishments in either France, Germany, Switzerland, Great Britain or the United States of America for a period of 12 months. During the industrial placement, students are required to return three progress reports and prepare a major project which must be submitted prior to entry to final year. If a student is placed in an English-speaking country, the Department can arrange a short continental placement to enhance language skills prior to return to the College.

Year 4
Financial Management, Marketing Management, Human Resource Management, Strategy & Enterprise, French, German or Spanish, Industrial Year Project, Enterprise Development Project.


Recognition by Professional Bodies
Graduates are admitted as full members of the Irish Hotel & Catering Institute, and receive full exemption from the examination requirements of the Hotel, Catering and Institutional Management Association (UK), being admitted to the grade of Licentiate Member. Progression to full membership is possible on completion of a specified period working in the industry.


Opportunities for Further Study
Graduates have established a good record of progression to post-graduate studies in institutions in Ireland and overseas.

NATIONAL DIPLOMA IN HOTEL & CATERING MANAGEMENT - (Full-time)

GA018 BUSHOT

Aims
To offer a course to young people with a flair for the practical aspects of the Hotel & Catering business and who aspire to management or ownership of small or medium-sized enterprises.

This course has a higher input of practical subjects than the other courses in Hotel & Catering Management offered by the department.

Entry Requirements
MINIMUM entry requirement is : Pass (Grade D3 or better) in five Leaving Certificate subjects, including Mathematics and English or Irish. In practice, entry levels are significantly above the minimum and points are calculated from the SIX best subjects.

Course Duration
Three years full-time.

Career Outlets
Opportunities in management of Hotel & Catering businesses initially at supervisory level, and graduates can progress to general management or ownership. The initial focus of the course is on small to medium-sized enterprises.

Course Content

Year 1
Food Studies 1 (Theoretical and Practical), Catering Studies 1, Accommodation Studies, Tourism Studies, Business Studies, Accountancy, French or German. A placement is arranged by the College, in an hotel or catering establishment in Ireland, from Easter to the end of September.

Year 2
Food Studies 2 (Theoretical and Practical), Catering Studies 2, Finance & Control, Management Studies, Information Studies, French or German. A placement is arranged by the College, in an hotel or catering establishment in Germany, France or Switzerland, from Easter to the end of September.

Year 3
Hospitality Management, Management Studies 1 & 2, Social Studies, Business Policy, French or German, Business Policy Project.


Recognition by Professional Bodies
Graduates are admitted as full members of the Irish Hotel & Catering Institute, and receive exemption from part of the examination requirements of the Hotel, Catering & Institutional Management Association (UK).

Opportunities for Further Study
It is possible, depending on academic achievement at diploma level, to pursue studies at degree level in institutions at home or abroad. Students who obtain merit or distinction in their final examinations will be admitted to the third (industrial) year of the B.A. in Hotel & Catering Management in this College.

NATIONAL DIPLOMA IN HOTEL & CATERING MANAGEMENT - (Block Release)

HDMB1

Note: A separate application form is required for this course and is available on request from the Admissions Office at the College. Applications will be accepted up to 31st October, 1995.

Aims
To provide a channel for those who wish to combine a training position in the Hotel & Catering Industry with a rigorous college education and who have already worked full-time in the industry for at least one year, post Leaving Certificate.

Entry requirements
MINIMUM educational requirement is: Pass (Grade D3 or better) in five Leaving Certificate subjects, including Mathematics and English or Irish. In practice entry levels are significantly above the minimum and points are calculated from the SIX best subjects.

A minimum of one year's full-time experience, post Leaving Certificate, in the Hotel & Catering industry.

and

Written confirmation from a reputable hotel or catering establishment that the student will be given a management trainee position for the first two blocks of industrial release.
(This letter must constitute a serious undertaking by the establishment to accept the candidate as a trainee. Candidates are advised not to present letters which have been obtained merely to fulfil this entry requirement, as their progress on the course may be prevented by the absence of a genuine trainee position.)

Entry is also subject to interview which is held in November each year.

Course Duration
The course commences in January and is divided into four blocks of College study and four blocks of industrial placement spread over three years and eight months. The College-based blocks are as follows; Block 1 - January to May in year 1; Block 2 - October in year 1 to February in year 2; Block 3 - October to December in year 2; Block 4 - January to May in year 4. The intervening periods and the period June to August in year 4 are in industry. The first two placement periods are in Ireland in the establishment which has accepted candidates in trainee positions, whilst the third, which is one year long, is on the Continent. The location of the fourth placement, after the fourth block of College-based study, is determined by the student in consultation with the course tutor.

Career Outlets
Because of the high level of placement in industry during the course, graduates will already have been launched on their careers and, with the flexibility which the course imparts to students, will have access to a broad range of management and/or ownership opportunities in the industry.

NATIONAL CERTIFICATE IN HOTEL & CATERING MANAGEMENT

HCHM1

Note: A separate application form is required for this course and is available on request from the Admissions Office at the College Applications will be accepted up to 15th August 1995.

Aims
To offer a course of studies to mature applicants with substantial experience at craft, supervisory, head of department or junior management level in the Hotel & Industry who wish acquire additional knowledge in order to progress to a management career.

Entry Requirements
a) The minimum entry requirement is: pass (Grade D3 or better) in five Leaving Certificate subjects, including Mathematics and English or Irish (points are calculated from the six best subjects) and a minimum of three years full-time experience in the Hotel and Catering industry.
or
b) Mature students (aged 23 or over on the 2nd January of the year in which the course commences) who have at least five years full-time experience in the Hotel & Catering industry.

N.B.Entry is subject to an interview which is held in early September.

Course Duration
Two years: The first year runs from the first week in October to Easter, and the second year from mid-October to May with a minimum of six months industrial placement in between, in Ireland, the U.K, France, Germany or Switzerland.

Career Outlets
Because of the high motivation required to leave the industry and return to College for two years, graduates progress quickly to positions of managerial responsibility in the hotel & catering industry and, with additional experience and/or further study, to senior management posts.

NATIONAL CERTIFICATE IN HOTEL ACCOMMODATION & LANGUAGES

GA021

Aims
To offer a course to young people who would like to make a career - initially at any rate - in what is called, within the industry, Rooms Division which covers the following operational departments in larger hotels: reception, reservations, cashiering/billing, telecommunications, porterage, information, housekeeping, laundry, maintenance, security and, in some establishments, leisure facilities and ancillary services (e.g. gift shop, hairdressing, leased-out space and so on). In summary, the course focuses on all those areas of a hotel which do not have to do with food and beverage, i.e. restaurants, bars and associated activities.

Entry Requirements
The minimum entry requirement is: pass (Grade D3 or better) in five Leaving Certificate subjects, including Mathematics and English or Irish, and a minimum of grade D3 (higher level) in a continental European language. In practice, entry levels are significantly above the minimum and points are calculated from the six best subjects.

Course Duration
Two years: the first year runs from September to Easter, followed by a five-month mandatory placement in an hotel in a European country. The second year is a full academic year, running from September to May.

Career Outlets
Ireland has been a member of the EC for twenty years and many future graduates will increasingly look, initially, to the varied career opportunities available in Rooms Division, not alone in Ireland but throughout the Community. The career targets of young men and women who graduate from the course will be from head receptionist/front office manager or accommodation services manager (formerly called head housekeeper) to full management responsibility for the entire Rooms Division. Thereafter, with suitable experience and/or further education, graduates may progress to general management of an entire hotel. Opportunities exist for both male and female graduates.

Front Office Studies 1, Accommodation Studies 1, Business Studies, Social Studies, and two European languages: students select two from French, German or Spanish.

Year 2
Front Office Studies 2, Accommodation Studies 2, Management Studies, Tourism Marketing and two European languages.

As this is a new course, opportunities for further studies are not yet clear, but successful students may be able to progress to further courses of study in Ireland and abroad.
